Swiss-Inspired. Colorado Roots.

In the early 1900’s Jacob Bauer ran a family farm, restaurant and The Waldschenke (“forest tavern”) in Romanshorn, Switzerland. From the 1920’s to the early 1940’s the cider was fermented in the cellar of the restaurant and transported to the forest tavern in glass jars. In the 1930’s as a teen, George Mueller (owner, Ruth’s, father) poured cider at the Waldschenke. After WWII a cellar was built at to process and ferment the cider onsite. George Mueller helped build the cellar and was a close friend since childhood of Erwin Bauer. 

During a trip to Romanshorn, Switzerland some sixteen years ago, our owners John and Ruth, along with George, visited the original Waldschenke. Although Ruth had visited many times before, this was John’s first taste of Saft (cider). The two were instantly enchanted by the thought of operating their own cidery. 

Now that there is a renaissance and growing interest for hard ciders in the United States, John and Ruth- along with John’s son, Keane and his wife, Kelley- decided the timing was right for thier own Waldschenke cidery!

As we start up our Colorado cidery we have incorporated a modern-day spelling of Waldschenke to Waldschänke!

Our Team of Founders

The Dufresnes have worked incredibly hard to get the doors of Denver’s first Swiss-Inspired cidery open for all to enjoy! The family bootstrapped the entire operation, working long days and nights preparing the space for you and your friends and family to enjoy.

Born and raised in Germany, John is no stranger to beer, but after meeting wife Ruth, cider became the name of the game. An entrepreneur at heart, it was only a matter of time before he aspired to open his own cidery.

Accountant/Cider Slinger

Born in Switzerland, Ruth was raised on her father’s traditional, unfiltered Swiss cider. With her knowledge of the original recipes, she and her family are the inspiration behind the whole operation.

Cidermaker/Bar Manager

With 10+ dedicated years in the craft beverage industry, Keane has a passion for creating unique and delicious beverages! A hard worker and an incredible human being, he’s definitely the one you want making your ciders.

Kelley Dufresne

Events & Media/Cider Slinger

An eye for design and a passion for family and community, Kelley always dreamt of opening a small business; she just never thought she’d be lucky enough to open a craft cidery in her home state with her new family!
